The bell peppers turned out better than I expected! (considering I bought them mostly because they looked like cool, plastic prop food you see in model homes and I figured they'd taste about the same.) I threw those and a chopped onion into a pan then sort of flash-grilled it in olive oil and soy sauce til it carmelized a bit. I marinated a couple chicken breasts in a hillbilly concoction made up of 2 store bought marinates(lemon herb and a buffalo wing flavor) and a spicy chicken seasoning packett.  I just grilled those in a pan til the marinate sort of baked onto the chicken then called it done.  Course I completely forgot about the garlic toast but thats par for my course...  thanks again for the info!  great site!

Stu,

 

Bell pepper are one of those veggies that do well when cooked slow or fast.  They'll hold up nicely when cooked slowly in something like a cacciatore and are also awesome when brushed with a little extra-virgin olive oil and cooked quickly on a grill or flat top.  The good news here is ya almost can't go wrong.

tks bro...  I got a late start so Im trying to rehearse and prep dinner for tonight at the same time! thankfully not in the same room...   figured Id better start checkin in with my professional cooking counselor before i served up these red and yellow bell peppers I bought simply because they looked cool... I already tend to burn things beyond recognition so I won't slow cook these things as I had planned...  tks for the tip bro!!
