Cinnamon Coffee Cake

 

Ingredients


 

1 cup brown sugar

1 cup white sugar

2 ¼ cups all purpose flour

¾ cup melted butter

2 teaspoons each:

Vanilla extract

Baking powder

Baking soda

2 teaspoons each:

Ground ginger

Ground cinnamon

1 egg,  large (whole)

8 oz butter milk

¼ cup caster sugar

Powdered sugar (for sprinkling)

 

 

 

 

Cooking Time:

30 to 35 minutes

Prep Time

10 minutes

 

Ready in:

40-45 minutes

                                                Method

Preheat oven to 375˚F (190˚C)

  1. Grease and flour a 9x5 inch baking pan or two sandwich tins
  2. In a large bowl combine brown sugar, white sugar and flour. Stir in melted butter and stir until mixture resembles coarse crumbs.
  3. Add vanilla extract.  Mix in Baking soda, Baking powder, Cinnamon and ginger.
  4. *Reserve ¼ cup of this mixture for the topping.
  5. In a separate bowl, combine egg and buttermilk; stir slowly into flour mixture.
  6. Pour mixture into prepared pan.  Sprinkle topping over batter.
  7. Bake in preheated oven for thirty to thirty-five minutes or until a toothpick or cake taster inserted in the middle comes out clean.
  8. Remove from oven and let cool for 15 minutes.  Sprinkle icing sugar and extra cinnamon over top before serving.
