The crostini- what a fabulous base for an appetizer! With our recent purchase of a panini grill, we are in search for the perfect crostini (but that's another recipe/ entry). This crostini is a wonderful appetizer that we have enjoyed a number of times.

Yield: 4 servings

1/4 lb. cooked bay shrimp (those tiny ones)
6 oz. imitation crabmeat
1/4 c. olive oil
1 roasted red bell pepper, seeded and diced
1 T. minced chives or green onion
1/2 T. torn fresh basil
Juice and zest of a lemon
Kosher salt and fresh ground pepper

8 - 12 slices of the "perfect" grilled crostini

Mix the 1st seven ingredients well in a non-reactive bowl. Season to taste with salt and pepper. Chill for a couple hours in refrigerator. Top each crostini with seafood mixture and drizzle with olive oil (optional). Enjoy!
