Just made this tonight for a party I'll be attending. It's so awesome, I had to post.

SALSA VERDE

1 to 1 1/2 lb. fresh tomatillos, papery husks removed
1 medium onion, chopped small
3 Jalapeno chili peppers, seeded and chopped
2 cloves garlic, chopped small
1/4 C fresh cilantro, chopped
2 Tbsp fresh oregano, chopped
1 tsp ground cumin
1 1/2 tsp kosher salt
2 C water
Freshly squeezed lime juice

Place all ingredients (except lime juice) into a sauce pan and bring to a boil. Reduce heat and simmer for 15 minutes. Turn off the heat and allow the mixture to slightly cool. Transfer mixture to a food processor and using the pulse feature, process until it resembles salsa. Add a little lime juice and re-season with salt if necessary. Allow the salsa to completely cool in the fridge before serving.

It can be served on top of grilled chicken breasts, fish, pork chops, scrambled eggs, and as a dip for chips.
