
This Salvadorian Coffee Cake is one of my top favorites. It has many versions on how it's made but the main ingredient is Parmesan Cheese. Some make it with cornmeal and it creates sort of this incredible cornbread texture with a nice sweet corn and Parmesan flavor. Others add sour cream or cream, but this version is just as good, very tasteful and you can taste the nice flavor of the Parmesan cheese and it has like a sponge cake texture...DELICIOUS! Quesadilla Salvadoreña (Salvadorian Coffee Cheese Cake) 3 cups sugar ½ cup butter 1 can evaporated milk 4 eggs (separated from whites) 2 cups fresh grated Parmesan cheese 3 cups flour 1 tablespoon baking powder 1 tablespoon sesame seeds Preheat oven 350 degrees. Grease a 13 x 9 cake pan. Cream sugar and butter, mix in milk and egg yolks, then mix in cheese. Add the flour and baking powder, mix well for about two minutes. Beat egg whites until peak form. Fold in the egg whites into the cheese mixture. Pour into pan and sprinkle with sesame seeds. Bake for about 30 minutes or until done.
