2 heads of black kale, chopped
1 can garbanzo beans, drained
1 cup sliced sundried tomatoes (soaked for 12-24 hours to soften)
1 can artichoke hearts, chopped (canned in water)
dressing:
1/2 cup natural peanut butter
1/2 cup fresh orange juice
juice of 2 limes
zest of 2 limes
1 clove garlic, minced
1.5 tsp fresh ginger, minced
2 Tbsp maple syrup
2 Tbsp tamari
red pepper flakes (to taste)
Blend dressing ingredients together well. Pour on top of kale. Enjoy!
Kale is filled with vitamins K, A, C, folate, iron, calcium, potassium.
