
For those who've checked out the video I shot with our friends at AffordableCool.com, you'll be happy to know there are several more on their way. One of which is a cooking demo put on by the mother of my co-star, Nelson. Born in Cuba, Mama Lesmo can cook up a storm, so she busted out a family favorite for our shoot. I enjoyed it so much I made it the next night for my son, Rocco. Not only did he love it, but he requested the leftovers the next night. Start to finish, this took me under 50 minutes to make. It truly is the epitome of a NoTimeToCook meal. Enjoy!
MAMA LESMO'S FRICASSE DE POLLO (serves 4 to 6)
1 4-pound chicken, cut into 8 pieces and skin removed
4 to 5 small white potatoes, peeled and quartered
1/2 of a medium-sized onion, thinly sliced
3 or 4 cloves garlic, chopped small
1 C tomato sauce
1 C dry white wine
1/4 extra-virgin olive oil
1/2 C green olives with pimientos
2 Tbsp capers
1 Tsp ground cumin
1 Tsp dried oregano
2 bay leaves
Kosher salt to taste
Chopped parsley
Optional additions: sliced green bell peppers, frozen peas, or anything that sounds good to you
In a pot add tomato sauce, white wine, olive oil, cumin, oregano, bay leaves and salt. Mix together to combine. Add chicken pieces, potatoes, onion, garlic, olives, capers, and any desired additions. Bring to a boil. Reduce to a gentle simmer and cook (covered) for 30 minutes, or until chicken is cooked through. Stir in parsley right before serving. Serve with steamed white rice.
