LEMON BUTTER COD FILLETS
Serves four
1/3 cup butter
1 lemon, juiced
3/4 tsp. salt
3/4 tsp. ground black pepper
1/4 tsp. minced parsley (or dried)
2 cloves garlic, minced
4 (4 ounce) cod fillets
1 Tbs. lemon pepper

Preheat oven to 350 degrees F

Melt butter in a medium saucepan over medium heat. Mix in lemon juice, salt, pepper and garlic. Bring to a boil. Cook and stir about 10 minutes, until thickened.

Arrange cod fillets in a single layer on a aluminum lined baking sheet (with and edge). Coat with the butter sauce and cover with another piece of aluminum foil.

Bake 15 to 20 minutes in the preheated over, until fish is easily flaked with a fork. Plate and drizzle some of the sauce on the fillet and garnish with parsley.
