Heck, I don't know what you would even call this. I was at a Halloween party and thought it was salsa but SURPRISE it wasn't. I know this sounds strange and if I hadn't accidentally ate it I probably wouldn't have ever tried it.

This makes a large bowl full so cut in half if you must.

You will need:

2 Large tomatoes
2 Avocados
1 Red onion
1 can black eyed peas (I only use half and I thing there are plenty)
1 large bottle of Wish Bone Italian dressing (Again, I don't use the whole bottle almost but not quite)
Bag or 2 of corn chips (Tostitos scoops are great)

Dice the tomatoes, avocados and the onion (slightly larger than the veggies in pico de gallo) add the black eyed peas and then the italian dressing. Stir and serve with your chips.

Hey Barbara,

Sounds really tasty. How's this for an idea? Instead of using chips, how about filling endive leaves with this mixture. You could even substitute the bottled dressing with olive oil, vinegar, and salt & pepper. I think your end result would be a really elegant, but easy and inexpensive Hors d' oeuvre or salad course. I'm gonna have to try that.
