Chickpeas are magic...You can cook and try many recipes with them. Here is one. This is an appetizer which mainly belongs to the south and east part of Turkey. Now here is how it is made:...

Ingredients :

2 bowls of chickpeas.
10-12 cloves of garlic
2 desert spoons of cumin
Salt
3-4 tablespoons of Tahini.
Olive oil
Lemon:

To decorate :

Some parsley
Sumaca
Red pepper ( powdered ?? )
Cumin
Dried mint

First of all you have to rest the chickpeas in water for a night. The next day; boil them for 40 -45 minutes.
Blend the chickpeas by adding a little water , the water in which the chicpeas are boiled and then you get a kind of paste or shall call it ( pure ?? ) Then add cumin, crushed garlic,tahini,salt and a little lemon juice.

Put the paste in a plate and decorate it with the spices and parsley. Finally season it with olive oil. And it is ready.....Delicious...:))

I will someday return to Turkey. I have a new bride and she is Chinese national. She has never been outside of her country and very few places in here country. But someday, Ankara, Adana, Bursa, Goreme Milli Parklar, Istanbul and Diabarkir will be the first places on my visitation list. I have a person with which to share the great things in this world... And Turkey is one of the seven wonders.

Bursa is close to Eskişehir and perhaps they are a town I remember from my studies that sponsored Chirstianity in the form of 7 churches. I believe Bursa was one of the 7, also. I am Buddhist so it make little differnece to me today, other than the land is beautiful.

I agree, it has been many years... And I simply want to come back to a much easier life style. Turkey has that.

Thank you for the following. I, of course, will follow yours because we might be able to collaborate on a dish or two.

Until then, Arkadaşım KAHVECİ... I too love coffee (especially Turk demitas Kave), we will remain in contact. It is a great surprise to meet you on this site. Thank you for the return to Turkish cuisine.

hey that's great hearing Turkish ! Teşekkürler Arkadaşım Michael....Evet Bursa da eskiden hıristiyanlık varmış. Bursa da birçok kültür biraradadır. You can find different cultures in the history of Bursa....1970s is such a long time...you should come again and see the modern times in İzmir...and may be a visit to Bursa...to eat Döner Kebap...that's such a nice surprise to meet you....take care..and I'll follow your blog...my nickname in blog is KAHVECİ ( that means the one who loves coffee or the one who makes coffee ) so you'll know me when I drop a comment...bye ...take care :))

PS...I must ammend this comment: you did not know that I was in Izmir in the 1970's... I do hope the place is still there and I have eaten Doner kebap--a taste treat that is in a class by itself. Most of Turky's foods are just wonderful. I loved my time in Turkey.

thanks for the information..that's great...travelling along a country. I've read in yoyur profile that you are interested in the Turkish dishes..that's even better.. cause we love to cook and share twice as much when people like our meals. İZmir has vast library of different recipes...it is mainly of veggies and Mediterrenean food..and ..I live near Balıkesir, a city called Bursa, you may have heard about it..It is the center of DONER KEBAP / ISKENDER KEBAP...if not yet tasted, you must one day..If you want you can visit my blog and get recipes there..I can translate the ones you like ( the photos I mean :))

I had some of this, a bit differently made, in Izmir, Turkey. I was stationed in Balakesir; from Izmir e881, the road would go north until Manisa where the road becomes the mian road to Balakesir (D565). That long stretch is called the Balikesir Kütahya Yolu. I did a great deal of traveling and found many excellent places to eat in Turkey. The Red Powder they used then was a combination of hungarian Paprika and hot peppers ground together. They roasted the Chickpeas and gave it a smokier flavor...

In Izmir:
The place is Balik Pisiricisi Veli Usta, located on the Med. Highway with an bay inlet--indoor and outdoor seating meals of the area and special American meals can be had and the best coffee this side of my own Kreuig. The address, if you ever want to go is on Atatürk CD, No 188/B Yzmyir Alsançak, Türkiye; it is in the southwest end of town on the Med. near bay frontage.
