This is a great healthy recipe that I got from GreenLiteBites.com, but I changed up the ingredients a bit to accommodate feeding my family of 5 and our tastes. I like to use Harvest Grains Blend from Trader Joes, I realize this might be hard to find for some folks, so you can also use brown rice or orzo in it's place (use one serving of the package in place of Harvest Grains). This recipe also makes a lot. If you're not feeding a family of 5, then you can use less or make leftovers. This is a great recipe to heat up the next day and perfect for lunch at the office (it's even good cold)!

2-3 romaine hearts (Trader Joe's & Albertsons sells these in a 3 pack, perfect!)
1 1/4 lb ground turkey
1 1/4 cup Trader Joe's Harvest Grains Blend (cooked according to instructions on package)
1 zucchini, diced
1 bag fresh baby spinach (found in the salad section)
2 large carrots, peeled and diced
1 small onion, diced
2-3 tbsp soy sauce (you can add more or less to taste)
2 tsp ground ginger
1-2 tbsp olive oil

For Dipping, I buy Trader Joe's Sesame Ginger Dressing. I know they also sell Sesame Ginger style dressings in other grocery stores.

In a large non stick skillet, heat olive oil over medium heat and saute onion until golden and soft. Add ground turkey and carrots, continue to cook and stir to brown turkey. Add in zucchini and spinach, continue to cook and stir. Once spinach wilts, add in soy sauce, ground ginger and harvest blend grains, mix all ingredients and cook for an additional 2-3 minutes until blended and heated through. Remove from heat and fill romaine leafs with turkey mixture. Drizzle tops with Sesame Ginger Dressing and eat like a taco. Surprisingly, the kids enjoyed this meal, it has lots of flavor and is really good for you.

These are great. Even "manly men" will enjoy eating out of a lettuce leaf. And I'm sure you could skip the meat to make it vegetarian-friendly. When are we having this again?

GreenLiteBites is one of my favorite websites! Thanks for this. You posted just in time, I was just building my weekly meal list & getting ready to head to the store. I was looking for one more dinner & this fit perfectly!
