This recipe will have everyone cheering at the dinner table. With the sweetness of apricot it's almost like a dessert dinner...well, you can tell your kids that at least. The recipe serves 2, but can easily be doubled to serve 4 (or quadrupled to serve 6). Enjoy!
1/2 tbsp butter or margarine
1 tbsp cider vinegar
1/2 tsp cornstarch
1/2 cup sugar free apricot preserves - room temperature
1/2 tbsp dry onion soup mix

Here is a quickie recipe to get dinner on the table that will also leave your children with smiles on their little adorable faces because they will LOVE it...promise.

Every SINGLE time I make Sloppy Joes - I can't help but break out into the Adam Sandler, Lunch Lady song. It's seriously annoying and I know this, and I don't care. I usually mix in a little dancing, such as the running man, cabbage patch and my all time favorite: the sprinkler. So, needless to say, I enjoy making a Sloppy Joe dinner and I the kids, well...they wonder what the heck is wrong with me (this is potentially video making worthy, hmmmm).…

This is a shout out to my vegetarian friends. My family does tend to eat some type of meat with most of our meals, but this tasty little gem is so good, healthy & filling, the meat won't be missed. Although, I have to admit, this probably is not going to be a kid favorite, my kids enjoyed eating the grilled veggies just by themselves. Enjoy!

1-2 zucchinis, sliced…

In an effort to eat healthier, we usually opt for Turkey Burgers in our house versus Ground Beef. Turkey has always been a bit tasteless to me, so I fell in love with the recipe from Rachel Ray that brings a lot of flavors to your otherwise boring Turkey Burger. You can serve it with all your favorites, I like putting them on Artisan Rolls with red-leafed lettuce, red onions and thousand island dressing. It is also great to eat protein style with no…

We have been enjoying the sunny weather here in So Cal and today it took a turn for the worse...a bit chilly with threats of rain, so what to make for dinner. I am not in the mood for soup, but I want something warm. How about some sizzling fajitas! This is a Rachel Ray recipe and it's "Yum-O!" (ugh, love her recipes but I want to smack myself for quoting that!) Hope you enjoy it.
You're going to want to marinade some meat first. You can either use 4 boneless, skinless chicken…

One of my favorite dishes to make is fresh Halibut and I have to admit, I am spoiled with a free halibut supply thanks to my dad who likes to fish in Alaska and brings back a freezer full of fresh caught, vacuum packed halibut. Sadly, my dad has not been to Alaska in a while and our fresh fish supply is high and dry (no pun intended). Two great places I get halibut for a pretty good price is Trader Joes (Frozen) and Costco (fresh). In the meantime, I…

This recipe can be cut in half for smaller families, but I doubled it because...well, we have 3 growing bodies that lately can't seem to get enough food. The meal is complete on it's own or I like to serve it over brown rice.
2 lbs. beef flank steak - cut across the grain into 1/4 inch thick slices.
2 lbs. Baby Bok Choy - cut in half lengthwise & cut larger pieces in quarters
6 tsp finely minced fresh ginger root…

This recipe is a quickie to get dinner on the table fast using pre-made ingredients to make a complete meal in a matter of minutes! You can pair it with a side salad and some garlic toast to complete or eat it as is.
1 package fresh cheese tortellini (you can find this in the fridge section of your grocery store near the cheese usually - I buy the family size or 2 packs of the small since I have 5 people to feed).
1 Rotisserie chicken - shredded to bite size pieces (found in…

This is a great healthy recipe that I got from GreenLiteBites.com, but I changed up the ingredients a bit to accommodate feeding my family of 5 and our tastes. I like to use Harvest Grains Blend from Trader Joes, I realize this might be hard to find for some folks, so you can also use brown rice or orzo in it's place (use one serving of the package in place of Harvest Grains). This recipe also makes
a lot. If you're not feeding a family of 5, then you can use less or make leftovers. This…

Since the Avocado & Goat Cheese sandwiches were such a hit, I thought I would share this recipe by Ina Garten that I make often for Tony & me. I use a French Baguette instead of Ciabatta and I also like to toast my halves a bit too. I also omit the onions myself and usually make the sandwiches open faced, but this is the recipe as Ina makes it. You could probably add the onion slices to the marinating peppers too, bet that would taste good. This recipe may sound time consuming (with…

Quick "Chicken McNuggets" you can make at home & feel good about feeding your kids (No pink oozy meat mush here folks!) Also, some of you may ask, "Why organic?" Organic is not necessary and I certainly understand if you choose not to use organic, but the cost (especially if you buy at Trader Joe's) is comparable to non-organic chicken and once you use organic chicken you will notice right away the difference in taste & quality.
1-2 pounds organic boneless, skinless…

This recipe was provided to me by Kirk Leins....It has been kid tested with 3 thumbs up (for those who don't know me, that equates to all my kids) and makes for damn good leftovers (if you have any...tonight, not so much). I personally omit the chili powder and paprika for the sake of my picky eaters, but miss it oh so much....so, if you like "flavor" keep it in! Hope you enjoy it as much as we…
