Creamy Chicken Enchiladas

Grilled Vegetable Sandwich Wraps

This is a shout out to my vegetarian friends. My family does tend to eat some type of meat with most of our meals, but this tasty little gem is so good, healthy & filling, the meat won't be missed. We have been enjoying the sunny weather here in So Cal and today it took a turn for the worse...a bit chilly with threats of rain, so what to make for dinner. Quick Recipe Chili

Feel like Chili for dinner but didn't start the crock pot at the crack of dawn to get it on the table in time for dinner tonight? Well then...here is a cheater chili recipe for you.

Pan Roasted Halibut

One of my favorite dishes to make is fresh Halibut and I have to admit, I am spoiled with a free halibut supply thanks to my dad who likes to fish in Alaska and brings back a freezer full of fresh caught, vacuum packed halibut. Sadly, my dad has not been to Alaska in a while and our fresh fish supply is high and dry (no pun intended). Asian Beef with Baby Bok Choy

This recipe can be cut in half for smaller families, but I doubled it because...well, we have 3 growing bodies that lately can't seem to get enough food. The meal is complete on it's own or I like to serve it over brown rice.

Super simple recipe to make meat loaf that cooks in half the time.....kid tested, kid approved too.



1/2 cup ketchup

1 1/2 tbsp dijon mustard

This is a great healthy recipe that I got from GreenLiteBites.com, but I changed up the ingredients a bit to accommodate feeding my family of 5 and our tastes. I like to use Harvest Grains Blend from Trader Joes, I realize this might be hard to find for some folks, so you can also use brown rice or orzo in it's place (use one serving of the package in place of Harvest Grains). Since the Avocado & Goat Cheese sandwiches were such a hit, I thought I would share this recipe by Ina Garten that I make often for Tony & me. JJ's Chicken Fingers

Quick "Chicken McNuggets" you can make at home & feel good about feeding your kids (No pink oozy meat mush here folks!) Also, some of you may ask, "Why organic?" "Healthy" Italian Chicken

This is a recipe I got from a friend. It's super quick prep time, easy to make and you have a healthy almost complete meal in a matter of 35 minutes.
