Butter Parsley Roasted Chicken with Duchess Potato Tartlets

Butter Parsey Roasted Chicken
  • 1 roasting chicken, about 3 pounds
  • salt and pepper to taste
  • 1 small onion, peeled and quartered
  • 4 large celery stalks, chopped coarsely
  • 4 large carrots, chopped coarsely
  • 1 shallot finely chopped
  • 2 to 3 tablespoons coarsely chopped fresh parsley
  • 4 tablespoons melted butter
