Roasted Bell Peppers & Goat Cheese Sandwiches

Since the Avocado & Goat Cheese sandwiches were such a hit, I thought I would share this recipe by Ina Garten that I make often for Tony & me. Quesadilla Salvadoreña (Salvadorian Coffee Cheese Cake)

This is actually a Pampered Chef recipe but I made a few changes to it. Great hot appetizer!



Ingredients:

1 8oz. package of cream cheese, softened

1 teaspoon Italian seasoning

"Healthy" Italian Chicken

This is a recipe I got from a friend. It's super quick prep time, easy to make and you have a healthy almost complete meal in a matter of 35 minutes.

Portobello Mushroom Supper Sandwich

Serves 2



Ingredients

2 large portobello mushrooms, stems removed

1/4 cup + 1 tablespoon prepared balsamic vinaigrette, divided

2 pieces focaccia bread, about 6-x-6-inches each

This is a super easy recipe and a great appetizer to bring along to any St. Patty's Day party. It's also the perfect spread for the beer bread posted by my mom a few days ago.
