If you are looking for a quick, easy and delicious appetizer for your St. Patty's Day dinner, look no further. This is my go-to recipe for a great cheese spread that works perfectly with soda bread, crackers, thick pretzel sticks, or even apple slices.
In this video, Betty demonstrates how to make Grilled Chicken Breasts with Country Ham and Swiss Cheese. These chicken breasts are grilled on an outdoor grill, and when done they are topped with a thin slice of country ham and a sprinkling of Swiss cheese. They are very tasty!
4 boneless, skinless chicken breasts
4 slices of country ham, trimmed of fat (You may use prosciutto or another type of cured ham.)
1 cup shredded Swiss cheese

It takes less than 15 minutes for the entire preparation (cooking time: 10 minutes, or when cooked to your liking). Super quick and super easy for the Super Bowl!!!

Since the Avocado & Goat Cheese sandwiches were such a hit, I thought I would share this recipe by Ina Garten that I make often for Tony & me. I use a French Baguette instead of Ciabatta and I also like to toast my halves a bit too. I also omit the onions myself and usually make the sandwiches open faced, but this is the recipe as Ina makes it. You could probably add the onion slices to the marinating peppers too, bet that would taste good. This recipe may sound time consuming (with… Continue
This Salvadorian Coffee Cake is one of my top favorites. It has many versions on how it's made but the main ingredient is Parmesan Cheese. Some make it with cornmeal and it creates sort of this incredible cornbread texture with a nice sweet corn and Parmesan flavor. Others add sour cream or cream, but this version is just as good, very tasteful and you can taste the…

This recipe was provided to me by Kirk Leins....It has been kid tested with 3 thumbs up (for those who don't know me, that equates to all my kids) and makes for damn good leftovers (if you have any...tonight, not so much). I personally omit the chili powder and paprika for the sake of my picky eaters, but miss it oh so much....so, if you like "flavor" keep it in! Hope you enjoy it as much as we… Continue
Ricotta Cheese is one type of cheese I use often and a very favorite of mine. I use it for many Mexican dishes as well as many Italian dishes. In addition, it can be used in dessert as well as savory dishes. I wanted to share this recipe on making Ricotta cheese because it's extremely easy to make! Although the original version is made of the Whey left over from cheese making, I find absolutely no difference in taste or texture with this recipe… Continue

For cheesecake lovers, this is one that never fails, its sweet taste is very light and has a creamy texture. Although it might look very sweet, it's not at all because it's made with Splenda sugar IF you choose to use Splenda and the topping has a tangy taste, which makes it an incredible combination!
I've been working on this recipe for a while. My idea was to come up with an easy, weeknight version of mac 'n' cheese that didn't utilize processed cheese or canned soup. After several non-successful attempts I think I've come up with something you're really gonna love. Check this out.
EASY BREAZEY MAC 'N' CHEESEY (serves 6)
2 C Barilla elbow macaroni
2 C sharp cheddar cheese,… Continue
So, the other day I picked up my son from school and headed for the supermarket to buy that night's groceries. The evening before I'd roasted a chicken and had a more than half of it leftover. Walking the aisles, I started picking up ingredients and put together this impromptu dish. It turned out to be extremely tasty. So good, in fact, that my 4-year old son, Rocco, had seconds. When he asked me what it was called I told him the first thing that came to mind...… Continue
