Meatballs and Marinara Sauce

Saw the picture of the meatball sandwich that Liz posted and I was inspired to post my recipe for the fillin's.



MEATBALLS AND SAUCE (makes 20 to 24 meatballs)



For the meatballs:

2 lbs. ground beef chuck (15 to 20 percent fat)

3 extra-large or 4 large eggs, seasoned with Kosher salt and beaten well

3 Tbsp extra-virgin olive oil

6 cloves garlic, chopped fine

1 Tsp dried oregano

1 Tsp dried basil

Easy Breezy Mac 'N" Cheesey

So here's the story...



I've been working on this recipe for a while. My idea was to come up with an easy, weeknight version of mac 'n' cheese that didn't utilize processed cheese or canned soup. After several non-successful attempts I think I've come up with something you're really gonna love. Check this out.

Bananas Foster



(serves 4)



- 2 large, perfectly-ripe bananas, cut into 1” slices

- 4 tbsp unsalted butter

- 1 cup dark brown sugar

- 1 tsp ground cinnamon

- 1 tbsp orange zest (optional)

- 2 oz. banana liqueur

- 4 oz. dark rum

Wisconsin-Style Grilled Bratwurst

(serves 4-6)



8 uncooked bratwurst links

2 bottles of any pilsner-style beer

1 onion, peeled and roughly chopped

1 stalk of celery, roughly chopped

2 cloves garlic, peeled and smashed

1 bay leaf

Fruit Salsa & Cinnamon Chips

I was at a get together with some gals at a Pampered Chef party hosted by my friend Cheryl Johnson. One of the demonstrations was this dish. The lime adds a twist that's really nice.

Peaches (fresh or canned), chopped
Raspberries
Strawberries, chopped
any other fruit you like
Squeeze of one lime
Zest of one lime

Mix it all up and serve with cinnamon chips (taste like churros but in the shape of tortilla chips).

Cheese Enfrijolada

Using as many Flour Tortillas as you like (I usually use about 8),
Fill with
Cheese, refried beans, salsa, grated carrots, chopped olives
place in rectangular pan. Cover with any or all of the above, plus tomato sauce to cover whatever tortilla is exposed and top with lots of cheese.

Heat in oven until Cheese is at least fully melted

Serve with Sour Cream and Salsa

¼ lb. butter or margarine

9 oz crushed pineapple (in own juice)

¼ cup brown sugar

2 tbs. cornstarch

1stp. salt

¼ cup red wine vinegar

¼ cup chili sauce

1/3 cup catsup

1 tsp. soy sauce
