We have been enjoying the sunny weather here in So Cal and today it took a turn for the worse...a bit chilly with threats of rain, so what to make for dinner. A new take on Taco Tuesday and a for sure hit with the kiddies!

1 lb ground chicken

1/2 cup chopped onion

3/4 c water

Cheesy Chicken, Mushroom and Broccoli Casserole

3 tablespoons of butter, plus a little extra for the casserole dish

2 tablespoons of all-purpose flour

1/2 cup of baby Bella mushrooms, sliced

Easy Meatloaf

1lb ground beef (I personally always use ground turkey)

1 pk of meatloaf seasoning (or to desire taste)

1/2 cup onion, finely chopped

1/2 cup of green bell peppers, finely chopped

1/2 of Old Fashioned Oats (plain oatmeal)

Feel like Chili for dinner but didn't start the crock pot at the crack of dawn to get it on the table in time for dinner tonight? Well then...here is a cheater chili recipe for you.

  • 1 roasting chicken, about 3 pounds
  • salt and pepper to taste
  • 1 small onion, peeled and quartered

Pasta Fa' Julieanna

When the moon hits the sky like a big pizza pie...it's Pasta fa' Julieanna...

Last minute quick fix for pasta lovers...my problem is that I can't just eat one portion! Herb-y and balsamic-y...this dish is a real treat! Plus, we have our greens, so all is well with the world even when indulging in pasta. Just make sure to use a whole grain version so you get the fiber!

Chicken, Asparagus, Goat Cheese Pasta

Pan Roasted Halibut

One of my favorite dishes to make is fresh Halibut and I have to admit, I am spoiled with a free halibut supply thanks to my dad who likes to fish in Alaska and brings back a freezer full of fresh caught, vacuum packed halibut. Asian Beef with Baby Bok Choy

This recipe can be cut in half for smaller families, but I doubled it because...well, we have 3 growing bodies that lately can't seem to get enough food. The meal is complete on it's own or I like to serve it over brown rice.
