JJ's Chicken Fingers

Quick "Chicken McNuggets" you can make at home & feel good about feeding your kids (No pink oozy meat mush here folks!) Also, some of you may ask, "Why organic?" Organic is not necessary and I certainly understand if you choose not to use organic, but the cost (especially if you buy at Trader Joe's) is comparable to non-organic chicken and once you use organic chicken you will notice right away the difference in taste & quality.

Lebanese Lentil & Spinach Soup (Adas B'Sbaanegh)

A Middle Eastern classic. Really, really, really good.



Ingredients:


  • 1 large yellow onion

  • 6 cloves garlic

  • 4 tablespoons olive oil

  • 12 teaspoon cayenne
  • 2 teaspoon cumin

Hot Pizza Dip

This is actually a Pampered Chef recipe but I made a few changes to it. Great hot appetizer!



Ingredients:

1 8oz. package of cream cheese, softened

1 teaspoon Italian seasoning

1 cup mozzarella cheese shredded

3/4 cup grated parmesean cheese

1 8oz jar or can of Pizza Sauce

Broccoli and Gruyere Gratin

This is a great side dish! Great for those people in your life who don't eat their veggies! :)



Ingredients:

2 large bunches of broccoli, roughly chopped

4 tablespoons of butter (1/2 stick)

1/2 cup all purpose flour

I love this recipe, I don't even remember where I got it! Everyone who has tried this has loved it, and it's super easy to make!

Quick & Easy Avocado and Goat Cheese Sandwiches

Here's another simple but elegant recipe that you can make for lunch or dinner.



Ingredients:



(1) 5 oz. package of goat cheese

1 large ripe Haas avocado, seeded and peeled

1 sourdough baguette (about a foot long)
