Salsa Verde

Just made this tonight for a party I'll be attending. It's so awesome, I had to post.



SALSA VERDE



1 to 1 1/2 lb. fresh tomatillos, papery husks removed

1 medium onion, chopped small

3 Jalapeno chili peppers, seeded and chopped

2 cloves garlic, chopped small

1/4 C fresh cilantro, chopped

2 Tbsp fresh oregano, chopped

1 tsp ground cumin

1 1/2 tsp kosher salt

2 C water

Captain Crunch Chicken

This is another one of my favorites, it is kid friendly and it is even good cold the next day. I think I got this recipe from Planet Hollywood, but I will share it any ways.

Mediterranean Roasted Shrimp and Tomatoes (serves 4)



30 medium-sized shrimp; shelled and deveined

1 14.5-oz. can of chopped tomatoes, drained

5 ripe Roma tomatoes, seeded and chopped

Chicken and Broccoli in Oyster Sauce

Tony P Jr. asked for a chicken stir fry recipe and this is what I came up with. Just thought I'd share it with y'alls. Let me know what you think



Broccoli and Chicken in Oyster Sauce (serves 2 to 4)

- 2 tbsp light soy sauce

ARRABBIATA ASPARAGUS PENNE PASTA

Here is a recipe with lots of taste for how little work and time that is involved.

I made it up, and it has become a family favorite.



You will need :

1 bundle of fresh Asparagus

1 bag of pre-washed FRESH Spinach leaves ( you can use more if you like spinach)

BUTTERY SNO BALL COOKIES

Here is a delicious recipe for classic holiday SNO BALL COOKIES, but they are good any time of the year !!



1 cup butter ( do not substitute with margarine or spreads)

1/3 cup sugar

2 tsp water

2 tsp vanilla

2 cups flour

1 cup chopped pecans or pecan pieces

This is a fast, easy dinner to make and you can tone down the spicy or turn it up depending on your taste.
