Good Inspiring Day, many regards Helen.. If I could send taste of this Pie... Vendace is a typical fish in Saarijärvi. Vendage is the
very important export fish in Viitasaari in the old days, too..
It taste good but all like not it.. It can fry with butter in frying pan and to serve with mashed potatoes, very good food.. Bon Appetit!

Hi again, Mary-Ann! This is "Fish Pie"-recipe "Patakukko" from Karelia (the same as below, serves 4-6):

1 kg/2lb small perch or vendace
300 g/10 oz fatty pork, cut into strips
1,5-2 tbsp salt

Dough: 200 g/7 oz rye flour
75 ml/3 fl oz water
40 g/1,5 oz plain flour
1 tsp salt

Clean the fish and sprinkle with salt. Leave the fish to stand in the refrigerator for a few hours or overnight to allow the salt to soak in. Line a baking dish with strips of the pork. Place the fish in the baking dish and a drop of water.
Preheat the oven to 170 C/325 F/Gas Mark3. Mix together the rye flour, water, plain flour and salt to make the dough. Knead it well on a floured board. Roll out the dough and use to cover the fish in the baking dish. Bake fo 2-3 hours until golden.

Hi, Mary-Ann! I will send Finnish Fish pasty-Bread with pork and muikku-recipe, or? This "kalakukko" is from Savonia and East-Finland. It's traditional food (packed lunch) here and served with butter. The fish, mostly vendace, is baked with pork in a crust made of rye dough. This is one of our provincial specialities here in Finland... so in the old days too.. Have a Beautiful day! Many regards, Helen.. and picture..

hi ! happy to be friends with you, I am a teacher of English... and I love cooking, since the time is limited I only can enjoy myself after school and at weekends. Here in Turkey we don't prefer buying canned food, let's say most of us...But our kids like eating junk food, so it is sometimes qıite difficult to persuade them about eating healhty food, we do our best.... Please visit my blog and may be we can share recipes; I can translate the ones you like ....:))
