"I wouldn't recommend baking them in a cupcake pan, Sur.  It would be very hard unmolding all of them at one time.  Ramekins are still the best choice. Best, Kirk"

Kirk Leins replied to the discussion 'Got any recipes for a whiskey peppercorn sauce to go with filet mignon?'
"Love the idea of bringing mushrooms into the mix.  That's a great idea! How about using dried porcini that have been reconstituted and substituting a portion of the chicken au jus with resulting mushroom broth? Sure sounds delicious on…"

No-Knead Bread courtesy of Sullivan Street Bakery

Here's a recipe that I cannot take credit for, but "kneads" to be part of your baking repertoire.  Making bread is usually a painstaking and messy process, but thanks to Jim Lahey at the Sullivan Street Bakery it is now something that any (and I mean any) home cook can easily pull off.  This bread is unbelievably delicious…See More

Cooking With Kirk #7 - How Should I Cook My Vegetables?

"The bell peppers turned out better than I expected! (considering I bought them mostly because they looked like cool, plastic prop food you see in model homes and I figured they'd taste about the same.) I threw those and a chopped…"

Cooking With Kirk #7 - How Should I Cook My Vegetables?

"Stu,   Bell pepper are one of those veggies that do well when cooked slow or fast.  They'll hold up nicely when cooked slowly in something like a cacciatore and are also awesome when brushed with a little extra-virgin olive oil and…"

Thanks for the opinion on the Bass. Sea bass is good with almost any style of cooking... I have not had it in sushi, however.

Hi Kirk,
Pardon this informal inquiry, but ... I am an editor of an Alzheimer's caregiver magazine (Preserving Your Memory). We have a regular food and recipes column that focuses on healthy dishes, and we'd like to feature you and this website in our next issue. How may I get in touch to set up an interview, if you are interested?
Thanks in advance!

Hi Kirk - no, I haven't fallen off the face of the earth! But we did move into our new house in October, and the schedule has been insane - I still have lot of boxes to unpack! Loved the videos of my son and daughter-in-law! I told Tony that I was going to have you come to my house and show me how you would set up my kitchen and make it more workable. :-) Still trying to get a pattern down for my cooking, entertaining, etc. Gonna get my 11 month old granddaughter working in the kitchen at an early age!

So sorry to disappear, but I've been busy wedding planning (4-18) and trying to lose weight... i.e. eating MyFitFoods.com vs. cooking. I'll be back soon.
